Rice Menu
Rice recipes with vegetables and lean meat is preferable if someone is on a diet and wants to loose weight.
With approximately 200 calories per cup serving, it is free of fat, cholesterol, and sodium. Rice is easily digestible, making it suitable for all ages and individuals with sensitive digestive systems, and its naturally mild flavour is a suitable complement to many dishes.

Lemon Rice
Ingredients
Rice 1 cup
Water 2 cups
Oil 2 teaspoons
Lemon juice 2 tablespoons
Salt To taste
Method
1. In a bowl take oil along with the seasoning and cook high for 5 minutes covered with a lid to prevent splattering.
2. Cook the rice with 2 cups water on high for 15 minutes.
3. Add the seasoning and salt with the rice and mix well.
4. Stir the lemon juice with it and allow it to stand for 5 minutes.
5. Serve while hot with plain some gravy subji or papads.
Vegetable Pulao
Ingredients
Rice 1 cup
Water 2 cups
Oil 4 tablespoon
Onion 1 large
Mixed vegetables 1 cup, chopped
Garam masala 1 tablespoon
Salt To taste
Method
To prepare the vegetables:
1. Clean the vegetables with warm water and dry them well.
2. Mix all the ingredients for the masala, except the ghee, and marinate the vegetables in it for one hour.
3. Heat ghee and deep fry the onions till well browned. Remove from ghee. When cool, grind to a paste.
4. Clean and cook the rice in double the quantity of water. When done, remove the rice and spread it on a plate. Keep aside to cool.
To prepare the rice:
1. Lightly roast the saffron, powder and sprinkle over the rice.
2. Heat ghee in a pan and season it with the whole spices.
3. Add the vegetables and saute for five minutes.
4. Add a little water and cook the vegetables till done and almost dry.
5. In a baking dish arrange alternate layers of rice and the prepared vegetables.
6. Top with garnish and bake in a moderately hot oven for 20 minutes.
7. Serve hot with raita and papad.
