Kaju Katli
Ingredients
Cashews 3/4 cup,
khoya grated 1/2 cup,
sugar 1/4 cup,
silver foil for decoration,
Method
1. Grind the cashews to a fine paste and mix graged khoya well.
2. Take sugar and dissolve in 1/2 cup of water and cook it till it becomes of one thread consistency.
3. Add the cashew mixture in the sugar and mix properly
Apple Flavoured Bread & Butter Pudding
Ingredients
Apple 1/2 ,
eggs 2 nos,
castor sugar 1/2 cup,
milk 1 cup,
slices of bread 2 no.,
marmalade/jam 1 tsp,
lemon rind 1/2 lemon,
vanilla essence few drops,
raisins 1/2 tbsp,
almonds 9 no,
butter 1 tbsp,
Method
1. Slice the apples and arrange in an oven proof pie dish.
2. Sprinkle lemon rind on them.
3. In a separate bowl, beat eggs and sugar till thick and fluffy.
4. Gradually add and mix milk and vanilla essence to the egg & sugar mixture.
5. Pour this mixture over the sliced apple in the pie dish
6. Apply butter on one side and jam on the other side of the bread slices and cut each slice into four
7. Place the slices with the jam side facing upward on the egg mixture
8. Sprinkle nuts and raisins on the top.
9. Bake at 350 F for 25-30 minutes
Note: The puddings should be firm to touch. Serve hot or at room temperature or cold.
Orange Cheese Cake
Ingredients
Biscuit crumb 5-6 nos,
honey 1 tsp,
butter 1 tbsp,
yogurt 1 tbsp,
jelly powder 1/2 tbsp,
boiling water 2 tsp,
cottage cheese 1/2 cup,
orange juice 2 tbsp
orange segment 1 orange
orange rind 1/2 tsp
sprig of mint leaves
Method
1. Mix honey, biscuit crumgs and butter put it in a pie dish and chill until set.
2. Dissolve jelly powder in boiling water, add orance juice and stir. Leave until it begins to set.
3. Add cottage cheese and yogurt. Mix well.
4. Pour into the pie dish. Chill until set.
5. Decorate the top with orange segments, orange rind and mint leaves.
Bhapa Dahi
Ingredients
Curd 1/2 cup,
milk maid 1/4 tin,
cashews (chopped)
6 large,
raisins (chopped) 1/2 tsp,
cherries (chopped) 1/2 tsp,
cardamom powder 1/4 tsp,
Method
1. Take milkmaid in a vessel and add curd to it.Stir to mix well.
2. Add cashew, raisins, cardamom powder.
3. Put the mixture in a steel box and cover it with a tight fitting lid.
4. In a pressure cooker, put 1/2 glass water and place the steel box in it and pressure cook for 15 minutes.
5. Open the pressure cooker after 10 min and take out the steel box.
6. Empty contents of the box upside down.
7. Cut the curd into pieces and garnish it with cherries and serve cold.
